Based on the fact that occurred in processing industry food and fruits, then it should be found a proper way in order for the processing of food and fruits can produce a quality product with high nutritional value and quality have a save the old one without the use of formalin or preservatives with chemicals that are not dangerous, one of them namely chitosan from snail Achatina fulica. Chitosan from snail Achatina fulica is a product derived from the chitin polymer that is a by product or waste from the processing of the fishing industry, potentially very chitosan from snail Achatina fulica to serve as the ingredient antimicrobial and as a preservative in food and fruit, because it contains the enzyme lysozim and aminopolysacharida cluster (-NH3) which is able to inhibit the growth of microbes. Ability to suppress the growth of bacteria due to the chitosan has polikation. Positively charged polikation that is able to inhibition the growth of bacteria, in addition chitosan also acts as a natural preservative that can overlay (edible coating) made of various materials including polysaccharides, proteins and lipids that can improve the quality and extend the save, so it slows down oxidation and keeping the humidity that scientifically proven snail shell Chitosan can be solve the problem to serve as natural preservatives of fruit and food.
